"Kanbutsu," Dried Food

It's "Ii-kanbutsu-no-hi" or Good Dried Food Day. The Kanji characters used for "Kanbutsu" include some parts which can represent 11 and 20. That is why November 20th is designated as the anniversary.

Dried foods such as dried kelp, dried and smoked bonito, and dried shiitake mushroom, can make soup stock called "dashi."  It's a very important ingredient in many Japanese dishes, "washoku."

Every morning, I make broth from "katsuo-bushi" or bonito flakes and "niboshi" or dried sardine to make miso soup. A morning bowl of miso soup is good for your health. Would you like one?😉
