Have you ever eaten "Tanuki soba" in Japan? If you order "Tanuki soba" at soba restaurant, you may be served different type of soba noodle depending on the region. In Osaka, "Tanuki soba" means soba noodles in a hot "dashi" with deep fried tofu on top. On the other hand, in Tokyo, it means the ones in a hot "dashi" with crunchy pieces of fried tempura batter. So the soba noodle in the photo above is usually called "Tanuki soba" in Osaka. In Kanto region, it's called "Kitsune soba."

By the way, ”Kitsune" means a fox, which has been thought as a messenger of the gods and auspicious animal. It is said that a fox likes deep fried tofu. So the wheat noodles with deep fried tofu are called "Kitsune udon."
