”Kohaku kamaboko"

It's the third "Osechi" series.
I'll introduce you two dishes: "Kamaboko" and "Tazukuri."
First, “Kamaboko.” It is a boiled fish paste. Especially during New Year's holidays, we eat "Ko-haku kamaboko"; "Ko" means red and "haku" white. The combination of red and white is the color for celebration and symbolizes good fortune. Red is said to keep evil spirits away and white means holly and purity.
"Tazukuri" literally means "to make rice paddy field" and stands for "great harvest." It is made from dried baby sardines cooked with sake, sugar, and soy sauce.
