The new green tea season has started. Today, March 2nd, is "Green Tea Day" in Japan. And it's also "Hachiju-hachi-ya," which literally means "the 88th day from the beginning of spring (Risshun) in the lunar calendar. It is believed that drinking the tea picked around this day, called "Shincha," protects you from illness throughout the year. "Shincha" has less astringent taste and more "Umami" flavor, which can relieve our stress.

For your information, the used "Shincha" can be cooked. The bottom is a photo of the dressed tea leaves with soy sauce. It tastes like boiled spinach with soy sauce dressing. I recommend it!
